I wish to see what value I had used on a fillet or chamfer command.
Apart from zooming in and measuring the area, is there another way ?

In V5 certainly not. In V7/V8, IF you have made the fillets with FilletEdge and IF you have not otherwise modified the object afterwards, you can select it, run FilletEdge again, hit Edit and the various radii used will show up (because in principle you can edit them). Otherwise, once the object has been modified, you’re back to measuring. I’m not sure measuring is any slower than doing the above anyway.
Rhino is not parametric and does not in general remember dimensions used to create things.

for fillets only, if you know how to use IronPython scripts, you might try a script that I used to use for that:
It lets you select the surfaces, then it shows the radii values.
When you’re done, just hit Enter and the text dot showing the radii disapper.
