When I save Rhino7 3dm file to Rhino5, text font type is changed.
First I set text font as ‘Calibri’ in Rhino7 and save to Rhino5 file.
Then open the file in Rhino5, the text font changed to ‘Arial’.
Also when I set the text font as ‘Arial’ in R7, after save to R5 and open, it changed to ‘Calibri’.
Did I miss something at save process…?

From a quick test here, the font that is set for the style in Rhino 7 is the one that is saved in the Rhino 5 file format. That is, if you create text in Rhino 7 with a specific style and then override the font for that specific text object, it’s still the font that is defined in the style that will be used in Rhino 5, not the font that was used to override the style.
