You have the latest version of Rhino for Mac? (V5.4)
Is your OS recent enough for Grasshopper?

OS X 10.11.6 (El Capitan) or better is required for Grasshopper for Mac beta

The command is Grasshopper… (not GH) - does that work?

Also, if you are using an expired eval license, Grasshopper will not load.
