According to this page, Kangaroo current version is 2.5.3.
My Grasshopper version is rather up to date:
However it seems that the Kangaroo version inside my Grasshopper does not match the last Kangaroo version.
For example: some panels seem to be missing:
And some inputs are not proposed - for the Solver component:
Am I missing something?

When you have a current Rhino/Grasshopper version, Kangaroo is automatically the most up-to-date version available, as it comes included and there is no need to do any other download or install.
The different tab layouts and input parameters in your screenshots are from earlier versions before some reorganisation.

Yes, that page shows an older version.
