Hi Robin - I’m pretty sure that I can safely answer “No” to the “be updated” part of the question.
As for the “will work” part - possibly so, but we are fixing Catalina-specific bugs on Rhino 6 only. One such fix for an issue with export will be in the upcoming 6.17 update.
@dan might have additional comments…

This week’s development meeting indicated, we would probably need to revive the Mac V5 development tools to make some change required for Catalina.
I have no idea what the status of that development is, or how long the work might take.
The short answer is Do Not update to Catalina yet or your Rhino will not run.
There is one known bug in Rhino for Mac on Catalina:
RH-54151 Export: Cannot export to different file formats when running on macOS Catalina (not publicly visible because of some sensitive info).
It has already been fixed in Rhino 6 for Mac. We do intend to back-port the fix to Rhino 5 for Mac. We have not done so yet, but if the fix works, we intend to publish a 5.5.5 update.
Aside from this bug, Rhino 5 for Mac 5.5.4 runs on macOS Catalina Beta 5. There may be yet undiscovered bugs, so caution should be exercised.
Thanks, that’s helpful and appreciated. Just starting to plan our upgrade path and what we need to do as and when we feel the need / desire to upgrade to Catalina
Hi, is there any update on this? Thanks
As it turns out, the above RH-54151 is not a problem on macOS Catalina. Rhino 5.5.4 ought to run on macOS Catalina as is.
Just clarifying that now Rhino5 has been updated to allow previous files to be opened with a Mac upgraded to Catalina.
Needing to upgrade to Catalina myself.
