Is there any reason why I keep getting this curved pixelated extrusion?

Hello- the display mesh is too coarse - either the object (Properties > Custom mesh) or the document (DocumentProperties > Mesh page) will need custom mesh settings:

It can also help to run DivideAlongCreases > SplitAtTangents =Yes on some objects.
