I take it those “front/side views” are not details on the layout but model space viewports and you want to turn off a layer in a detail on a layout?
In Rhino 8, the first lightbulb you see in the Layers panel is the “global” on/off switch. This sets visibility in both model space and layout space.
There’s now a second lightbulb that controls visibility in either model space or layout space, depending on what is active:

For me, if I am in FRONT view: I click the bulb on the left ON. If I toggle the bulb on the right, the layer goes on and off.
If I m LAYOUT view and do the same, the layer stays on. Toggling the bulb on the right has no effect.
When in layout view, you need to select the detail frame (i.e. select the detail) in order for the lightbulb setting to get applied to it. It’s not all that ‘discoverable’. It is this way because one can have multiple details on one layout page, so it needs to know which to apply the setting to.

The Rhino 8 UI has ben unified with Windows UI.
So, unfortunately those that are used to Rhino 5, 6, or 7 Mac now have to get used to this new look.
All the layer controls of Mac 5, 6 & 7 have been unified into the one Layers panel in Rhino 8.
