You can find Rhino tutorials by version here.
There are a lot of Rhino 6, 7, & 8 that have layouts.

There are existing tutorials that were done in Rhino 7 and Rhino 8. The Rhino 7 workflow also works for Rhino 8 and Rhino 8 Mac as well.
