Being able to copy and paste hex colour values for material properties etc. would be extremely useful and time saving.

Hi Bill - that seems to be possible now in the latest Rhino 7 WIP. Have you just tried this and you are expecting something else?

Thanks for the reply Wim, but I am having trouble finding where it is - maybe I am looking in the wrong place. When I choose an object and go to the properties tab and click on ‘materials’, I then choose ‘color picker’ underneath colour in the custom settings I can’t see an option for hex code anywhere in the dialog box - there is just RGB values. They can be switched to HSL etc, but not hex code. (version is 7.0.20112.12445, 21/04/2020).

I just checked in 7.0.20111, i.e. a day older than yours, and see that this feature is not in there yet.
In the current in-house version, this now looks like this for object / layer color (and the same but without the transparency slider for material color):
If all goes well, a new public version will be released later today / early tomorrow.
