Imho there is no benefit hiding that, it should be there by default when the menu is opened.

Because it is implemented that way in applications that Apple creates? You’d think it would be second nature for a Mac user, no?

I think it is just bad UI design. If you have a menu you should not be forced to drop down the menu while holding down any key to see extra items. SaveAs was never hidden under Windows and it is painful to teach these differences in classes with mixed operating systems.
As far as i see it, Apple uses such hidden menu items eg. to prevent inexperienced users changing certain critical os functions. In this case it might make sense. But there is no correlation with SaveAs which is even less destructive than Save.

It is specifically Save As
that is implemented this way by Apple.
