It is hard to comment meaningfully unless you post a model. It is even harder when you post contrasting images at different zoom levels.
I don’t see what you describe. Do you perhaps mean some of the edges are now a series of chords instead of smooth curves?
And when you say “every new file I create”, do you mean only files created from the one that originally had the issue or all files, including brand new ones created from a blank template?
it most likely is your render mesh setting, you might have set it to a very low polygon count, go to your File settings, under mesh increase the polygon count either manually or through the prepared settings.
i assume you have stored it in the template so every new file you then open will have these low settings.
this or your placed them far from the origin which deteriorates the display mesh either regardless of the settings.

Yes. When I create a new file and I copy and paste those models, the edges don’t have smooth curves
