Surface edit problem UV direction

I am sorry if my question is too naive. I am pretty a beginner here.

I am getting mad because when I modify a surface, by selecting a row of control point in one direction it gives me a sharp-edged result while in the other direction it gives me a soft edges.

Check the degree of the surface in the direction that gives you the kinky edges.
If it is less than three: there you have the cause of your problem.
