I’m having the same problem in Rhino Version 7 (7.10.21256.17002, 12021-09-13)
Beach ball spins for long time and pointer appears briefly then beach ball again.
A restart of Rhino gets me working again but the issue gradually comes back after a few minutes increasing in duration.
I’m going to revert to Rhino 6 to see what happens.
Rhino 6.35 seems to be working fine except crashing every time when trying to create new materials.

There is an issue with baking textures in 7.10 that might be causing the problems that you are having. For the time being, you can revert to 7.9:
