I’m having the same problem in Rhino Version 7 (7.10.21256.17002, 12021-09-13)

There is an issue with baking textures in 7.10 that might be causing the problems that you are having. For the time being, you can revert to 7.9:

We think we just found a problem that was introduced in V7 SR10 related to baking textures when Rhino is idling. https://mcneel.myjetbrains.com/youtrack/issue/RH-65697 V7 SR9 did not have the problem.
