Polyline Tool Question

Look at this guy’s tutorial, around the 4:30 mark:

He turns on the points editing for a polyline, and starts dragging out / modifying points. He gets curved segments between the points. Whenever I’ve tried this, I only get straight segments between the points. How is he getting curved segments? I can’t seem to replicate his results.

He probably changed the degree to 2 ? Moving the middle point of any segment will make a curve.

How does one go about changing the degree of a polyline? And will this produce a “middle point” in a line segment?
