How do i offset curve on mesh?

I’m trying to do the same thing as Offset Surfaces on a mash, I’ve tried a few techniques in Rhino and grasshopper but without any significant success.
My goal is to use the outline of my mash and slide it inwards into the shape so that I get a clear boundary that I can divide.

You can do that with Kangaroo and the on mesh goal.

I was going to suggest exactly that or, if the ‘mesh’ is planar or simple enough, reinterpret as surface, perform the OffsetOnSrf + MeshMap.

I tried a few variations in this direction yesterday but couldn’t get a decent result. I’m new to Kangaroo and would appreciate a further explanation. My goal is to slide the dots on the mash with control over distance and shape.

What are you going to do with the curve afterwards? What’s the overall goal?

I want to split the mesh into two parts: a variable border line (we are currently trying to create the inner line of this part), and a central surface.
I need to work on them separately later.
