It looks like he works by hand, without any digital modelling involved. There’s not going to be some easy quick answer to creating this in Rhino where you just plug in a formula - you’d have to actually model it.
SubD will probably be the easiest. You could start by making a blocky version by joining cubes or extruding their faces, to get the initial topology. Then make some edges smooth and others creased, and pull the points around so it curves in the right way.
