Sometimes when I am adjusting the technical view settings it all the sudden will change into another view setting all together and then I no longer have access to adjust/fine tune certain settings… it’s so frustrating and I do not know how to get it back.

I’m not sure what that means.
If you modify the factory-default display modes, you should be able to reset them to the original settings by using the Restore Defaults button on that dialog. If that - for some reason - fails, you can simply delete that factory-default display mode and restart Rhino. That display mode will then be recreated using the defaults.
