any chance of replicating these kind of vertical “curved” mullions with the curtain wall feature or similar?

You can create this kind of mullions by creating them with a rectangular profile and subtracting a solid afterwards.

Probably, you never want to cut your mullion manually.
You can create your own customized curtain wall through GH style.
You should do this, however, though Element not Curtain Wall.
VA does not GH Style option for curtain wall at the moment.
