Creating a 2D Sketch / DXF file from 3D Scan Data - Need Help

Hello. I am looking to import 3D Scan data into Rhino and create 2D Patterns. The idea would be to sketch along a plane and create the 2D patterns and export a DXF file that can then be sent to a cutter. Does anyone know how to do this and might be able to help me out

That process is called Reverse Engineering.
It is a complicated and fairly advanced use of Rhino but it certainly can be done.
Basically the scan data or mesh is used as 3D reference data, and a NURBS surface model is created that fits the scans.
