I’m looking to panel a 3D body on to a surface. This body has to fit perfectly and be normal to the surface top. However this surface is modeled in several different ways and therefore the surface lines on it change based on the modeling location. Is there anyway to manipulate the surface build lines or the paneling grid to match up on the surface? See the attached image for more details.

if your goal is to use the isocurves of your surface as a paneling system then maybe a way is via the ‘surface points’ component - to get existing surface points in UV corresponding to the untrimmed version of your surface, then keeping only what’s inside the trimmed region
