I’m having some issues with making surfaces from curves. I feel like I’m missing something on continuity/tangency of curves.

Not saying it’s a solution - plus I bet you’ve already delved into the diverse fun fillet scenarios with Rhino - however in my experience with things like this in the past, changing the tolerance, even before the sweep operation, can make it less bad.
one problem is the initial curve, a test you could do is the blendsrf with g1, currently I did a test in g2

There are potentially many things to improve. Could you attach a Rhino 7 file?
Please upload a file with the input curves used for the surface.
Using the Refit rails option in Sweep2 may help.

Well, macOS Sequoia does not allow the UNIX executable to run via the terminal, not even when in admin mode. The instructions are also very obscure. Maybe someone can furnish a V7 version of the file above.
