In rhino 8 the Dark Theme seems to retain some colors from the Light theme when it comes to text, like in this menu:

On my system, that part of the dialog looks like this:
I’d try toggling to “Light” in Rhino Options -> Appearance -> Colors and perhaps restarting Rhino before toggling back to “Dark”. If that doesn’t do it, you could try the Reset command.
