I use rhino Print to image all the time; as it can print to scale.
However, there doesn’t seem to be the ability to change the page size when printing to image; like there is when printing to RhinoPDF.
Can the page size options be imported to print to image as well?

Sorry to add, but one other similarity which would be lovely to have is the Portrait/Landscape orientation option as well as the page sizes

Agreed, it does not make much sense to treat PDF and image formats differently.
I’d suggest to unify the dialog, no matter if pdf, jpg, png,…
Page size
Portrait/landscape
Width, height.
Resolution=dpi
…as parameters that are interdependent, and update accordingly in the UI, should a counterpart be changed.
Something else, related:
Setting the output format to image is not remembered in the dialog (R7). It always falls back to PDF.
image quality on top resp. compression level.
And if you want to do batch output right: each layout in the batch list should remember it’s own settings.
That would mean making these print settings a property of every layout.
