I am enjoying Rhino 7, especially the new in house rendering capability.
However my machine seems to really struggle with it, especially when rendering multiple layers and with blocks added.
Files that have multiple blocks in them are also a bit clunky even in shaded mode when rotating in perspective.
This is what I have:

Have I set my machine to the best it will do, and is it really suitable for Rhino7?

In Rhino 7 Raytraced and Rhino Render currently don’t have GPU accelleration. This hopefully will change if and when the underlying render engine Cycles gets a Metal backend. The ETA on that is unknown. In your case it isn’t an issue anyway, since there isn’t a GPU to accellerate with.
There are some speed improvements that I am currently working. These will help to some degree on lower-power machines like yours. I also have two Mac laptops that I have to work with, and they are not a good choice for doing heavy rendering. The Mac laptops I work with already start to cry when I try to build Rhino from source. They become very heated, are very slow (compiling takes upwards of 30 minutes for even simple changes). All very frustrating. Then trying to use Raytraced and Rhino Render makes the laptops sound like they’re about to take off, so loud do the fans spin up.
I feel your pain with Raytraced and Rhino Render. I’ll be trying to make it less of a pain.
For the other display modes I’ll refer you to @jeff and @DavidEranen , but I think the verdict will be that the GPU isn’t providing enough juice to make Rhino 7 completely happy.
