I am creating a part that needs female screw threads on the inside in a specific size (1/8 IPS; 3/8 O.D. with 27 threads per inch) and was wondering if anyone knows the best way to go about doing this? I’ve attached an image of the part.

I’ve not done this but maybe try BoltGen:
Make a bolt, position it, and try a Boolean difference.
I’ll admit I’m not all up on my pipe threading standards, but according to https://www.engineersedge.com/fluid_flow/straight_pipe_threads_13376.htm NPSC is the same thing as IPS, which if is the case, you could use the threads from a place such as McMaster https://www.mcmaster.com/#46685k261/=1czewsr
