Stitch will connect two open edges… what were you expecting to happen on these interior edges?

If you preselect the edges and then run Stitch it works now.

The face disappears when I execute the command

Are you reporting this against the WIP (Rhino 8 now) or a Rhino 7 version? I tried to mock up a model like what you showed in an internal 7.4 build and don’t see the face removed. Please let me know and post the 3dm file.
Do you have the model before the face was deleted after Stitch?
