Are you using 8.5? if not, please update- I believe this has been restored (don’t come at me with torches if I’m wrong, this has been changed a few times recently, and I’m away from my mac atm)
Yes, it’s there in the current 8.5 SRC.
8.5 is currently in “release candidate” phase with the plan of making it the official service release on March 12. Here are instructions on getting a release candidate.

On mac, you can install as many independent copies of Rhino as you want at the same time.You can rename your existing copy of Rhino to something like “Rhino 8.4” and install the release candidate as well.

Are those copies sandboxed/independent? Is it possible for example to have several different Mac Rhino V8’s, each with different window layouts/toolbar arrangements, and perhaps running in different languages?
I don’t believe that is possible. The copies share the same “settings” directory
