On a SubD surface is it possible to subdivide only in one direction? Either in U or in V?

at the moment no. The main reason is that subd’s do not have U and V directions so to speak.
you can however add edges as needed.
Yes, but usually it’s a lot of manual work. Would be good to implement something to divide in one direction or the other.
right but again… subd’s do not have a “direction” it’s all dependant on your topology

the answer is neither. there is no u or v… the topology is arbitrary so you cannot determine direction.
the best option at the moment if you need many subdivisions between two edges is to simply delete some faces and bridge with as many edges as you want.
