How to change arity of Evaluate, Expression, Concatenate and Format components?

In some posts and .gh files, I’ve seen components like Evaluate, Expression, Concatenate and Format with the number of input parameters different than default 2.
It’s probably trivial matter, but I couldn’t figure out how to change that number (?).
So my questions are:

  1. How to change the number of parameter inputs for the above components?
  2. Is this aspect of Grasshopper’s functionality documented anywhere in a systematic manner?

Zoom in close to see plus and minus signs to add or remove inputs.
