Difference Add Direct Shape vs Component Family Form

How come when I create a direct shape with Grasshopper I cannot change their material in Revit.

But when I create the same geometry using Component Family Form and then New Component Family, I can enter that family in Revit and change its components materials?

Is there a way to create generic geometry in Revit in a specific category from Grasshopper and being able to modify the material of those new geometries in Revit?

DirectShapes are not ‘Real’ Revit Elements and have limitations, here is a good breakdown of the capabilities. It sounds like a New Component Family is what you are looking for.
