I’d save the cash and go for the Core i7-6920HQ Processor (Quad Core 2.90GHz, 3.80GHz Turbo, 8MB 45W
From what I’ve read the Xeon runs a little cooler and uses a little less juice but if you’re saving enough cash to buy more memory i’d go for that and then make sure you work on a table and not your lap 
I’d say the i7 and GTX is fast enough but I’m guessing the AMD and Quadro are the only choices - have you checked out Holomark 2 Released! ?
I’d second spending the the saved cash on SSDs and more RAM.- either 16GB or 32GB if you can afford it.
