Creating Undulating Surfaces for a Roof/Wall system

Hello! Can anyone please help me create a surface that curves up and down randomly to make space under or above the surve. I want the elevation of it to almost look like this -

I tried doing that using this script but the points were annoying -

is there a way where i can make the heights more controllable?
