Why does a loft among these arcs in a line bend back on itself?

One of your curves is a NURBS arc. Also the curvature graph of the “true” arcs is odd, see the density change at their kinks. Maybe you used different CV weights? You can futz your loft with the “loose” option. It could be better to use “real” NURBS curves of degree 3 or better 5.

The main two curves, are lending back, and do not touch.
You might have to redesign these.

The curves are all right, as far as their spatial order is concerned. See the five originals down the middle. The curves are odd as far as NURBS curves go, but with the “loose” loft option, they can be lofted without the surface folding back on itself.

@miano This is because the weights of the control points of the last curve are inconsistent with the others. Unifying their weights can fix your current issue. FYI.
