I normally work in ghosted mode, just wondering which processor would be the best. Price for both systems are the same both with NVIDIA GeForce RTX 4070 SUPER 12GB GDDR6X graphics cards, same ssd drive both with windows 11 Pro. Only the processors are different.

It would be highly inadvisible to purchase any Intel processor on LGA1700, as it is a dead platform.
If you are not rendering on the 7800X(3D), then you will be fine with that CPU. Even for rendering, it probably would be acceptable, but will be far behind the 14700KF in this case (16 vs 28 threads). The 7800X3D is more gaming focused, with the whole AM5 linup being more power efficient at the higher end.
However, if you wish to wait a couple/3 of months then the new Intel Arrow Lake platform should be close, which will hopefully open up comeptition again.
Consider having a look at the gaming reviews, where they will normally include a Blender benchmark of some type, even though its not a gaming application.
