I guess you are using Rhino’s _Mesh command. If so, you need to use _QuadRemesh instead. You will need to experiment with the detailed options to get the mesh size you need. Use the Preview option to see the effect of making changes and read the help first to understand what the options do.

It is asked me for a project. i have to modelize objects with quad mesh with a certain size because they apply a texture on the object (not me)
models have to be on 3DSmax but i dont know it very well, it is easyer on rhino for me. so i would like to do maximum on rhino, and export it in .3ds to re-export it with the basic grey shader of 3ds (that is they asked to me)
the project is to modeling a bank of object with all the same UV to apply any texture they want after

From your requirements, it sounds like you should model the objects with meshes - not converting a NURBS object into a mesh. You can use the NURBS object as a guide to snap to but you’d be using the 3DFace command with PolygonType set to Quad and Append to build the object.
