Also note that when I re-opened the TEXT window the first time - the text changed from what it was. But my usual issue is that when I double-click the text and type something new in, it changes away from the font I have selected.

If I have a piece of text in Arial Black, double click it to edit and then start typing without doing anything else Rhino changes the font to Arial. If I click in the Text field in the panel before typing then Rhino keeps the Arial Black.
If I change the Style to use the Century font and create some text using Century Gothic, then when I double click and start typing, Rhino retains the Century Gothic and doesn’t revert to Century.
With the style still set to Century, if I create some text using Arial Black, then when I double click and start typing, Rhino changes the font to Arial, not Century.
Have you found other fonts beside Arial Black that change? I’m wondering if the issue only applies to Arial Black and is the result of a hard coded substitution inadvertently left in play.

I have tried reproducing this in the current WIP and that looks to be working fine.
Everything related to text was largely rewritten for Rhino 9, and as such, this isn’t something that can easily be back-ported to Rhino 8.
