Look through some of the grasshopper threads on crease angle, or getting the angle between surfaces. I’ve seen very similar to what you are trying to do.

Include Dihedral Angle with Unroll Surface Command?

There is a tool for Brep topology that gives you, for each edge, the indices of the adjacent faces. You can use this to work out the angle between the Z axis of the face planes.
