Rhino 7 self-resetting

I’m experiencing a very odd issue with Rhino 7 running on Windows 11.
Today, for the third time in 10 days, Rhino reset itself.
Meaning, I turn on my laptop, open Rhino, and all my toolbars, keyboard shortcuts, interface customizations, even the recent file list are gone.
I re-import my Options, reopen and rearrange my toolbars and workspace, close and reopen Rhino and everything is where it’s supposed to be.
Then, again, after a few day I’m back to square one.
Note: since this started happening there have been no Windows updates, no Rhino updates, not even driver updates, it just happens at random, and as you can imagine it’s extremely annoying and time-consuming.
Any ideas on what could be causing this, and on how to fix it?

Do you know the purpose for having Citrix installed on your system? It’s a common cause for problems running Rhino.

We need it to access a client’s PLM system. We’ve been using it for years, and there were no updates to it either prior to the issue starting
