I don’t see a way to remove colors, or other Layer display settings, set in a a Detail view to be whatever the global Model settings are for that Layer. It seems that once you create an override, there’s no way back. Am I missing something? (Using Rhino Mac v7)

In Rhino 7, there doesn’t appear to be a way back, no. It might be scriptable, though…
In Rhino 8, a Restore Default right-click menu option was added for this purpose:
