Hi, I am trying to offset the highlighted curves by 27mm but it only seems to allow me do do this left and right, I basically want to make this set of curves 27mm bigger all round.
Any help much appreciated,

you may have ‘c-plane’ selected when the command box opens, or try switching into front view and try it
Offset happens parallel to the CPlane, which in case of the Perspective viewport is World Top as default. As Milezee says, open your Front (I think, otherwise your Right) viewport and try again.
