Hatch settings are painful to use here (macOS 12.4) : hatch library is too big in comparison to the settings window, and it is not possible to resize the window.
Linetypes settings are easier to work with :
But maybe a gridview would also work quite well for hatches.
As a sidenote, I find it quite disturbing that this Settings window is changing size for each setting : I always end up going to Annotation styles to get an overview of where are the settings I’m looking for…
Also, if I remember correctly on Windows I can use the Options icon 
to open this window, whereas on Mac, this opens the Global applications settings, which I also can open through ⌘ + ,. I would prefer if it worked as in Windows.
