Unless you need a cake with Class A surface quality, and G2 continuity, I would be tempted to follow this topic:
And then do some underside work by pushing abd pulling surfaces into the underside buldge.
Even if you get a rough model, if you are using Rhino 8, you can then try and Shrinkwrap your way to success; creating a single mesh.
Thanks for the advices ! Yeah I do find using shrink wrap as an easy way to smooth and close the overall mesh (tried it quickly here just to see if it would work), but yeah i was more trying to understand how you could work that volume based on curves and also how you would connect that top part (buldge) with the more complex shell base
If this is still relevant: Artec Studio Lite ( Artec Studio Lite | Professional 3D scanning solutions | Artec 3D ) can reconstruct a mesh directly from photos or a short video (no scanner required)
For something like a madeleine, this is probably the fastest way to get the shape with minimal cleanup needed before export
