One way is to create a UserObject (File > Create UserObject) out of the GHPython component. In the dialogue you can select a custom icon.
I’m on a Mac, but it’s similar on Windows. After relaunching Rhino, the UserObject should show in the specified category (and sub-category) with the new icon.
In Grasshopper 1, the icons need to be 25 by 25px in size and in the PNG format as far as I know.
