you should maybe try Offsetting the lofted surface instead of Extruding it…

or, if you really want to do what the example is showing, the two main surfaces would be created individually and you’ll likely have a better chance at slicing it up if it were created that way.

(but notice the profile of the outer leg… it’s not an even offset… it’s thicker in parts and thinner in parts… you’ll need to use more than a single open profile curve to get this right)
