I’m looking for a solution to manage a Rhino license in a Mac environment with several users. Is it possible to install Zoo on a macOS server to distribute the license?

No. There is no MacOS version of the Zoo.
Zoo runs on Windows only but does support Mac Rhino licenses.
You will need a Windows computer or a Windows VM on your network to host the Zoo:
