Change Display Color for the 'interior' of an object

I’ve recently upgraded to Rhino 7, in previous version I was able to change the display color for the ‘interior’ of poly surfaces.

I find this very helpful as a quick visual reference as I’m working.

I can’t remember how I did it nor figure out now. Can anyone help?
