Cannot override premade material assignments in new software from Rhino 5 to Rhino 6

Howdy gang,
I have imported a file from Rhino 5 to Rhino 6 and am trying to assign materials to layers. The previous file had some rendering materials on them and I cannot find a way to clear them so I can apply better rendered materials in the Rhino6 version. If there was not a material previously assigned to a part, it is fine for me to render it no problem. But there were a few pieces that have material on them and the only way I can edit it is if I match the material property. The problem is I cannot go into the layer and set up the material and adjust it. I am not sure if I am missing a step? Is there a way to remove the previous assigned material from Rhino 5 without starting over?

To remove a render material from a layer, right-click on the material swatch, in the Layers panel, and click Remove Material from the popup context menu.
