Now that I have practiced a bit a more I really do like using the pipe and adding shapes to refine the blended surface. I’m just curious what the difference is between offsetting a curve vs using the pipe. I notice that the pipe method yields a more desired result. Both ways work really well though!

I’ve used offset curves on surface before. The whole pick direction thing is a total pain. I just find pipe faster and easier to spot continuity breaks with.

totally user preference, same same result. I use both methods depending on the desired outcome.
