Hello,
In materials , in the Bitmap texture settings how please do you change the editor that is associated with it? (Change the “Open image in associated editor” to something else besides the default.)

You can’t change this in Rhino, as Rhino uses the operating system open
mechanism. I wrote about this half a year ago
There is no real good way to change what editor is used on the edit command for images. This is by default for Windows set to MS Paint.
I have used https://defaultprogramseditor.com/ with success to change what editor is used when using the edit command (right-click on image in windows explorer, choose edit from the context menu). I have my Windows setup to use GIMP for that edit, so my Rhino opens images in GIMP when clicking the pencil.

You may be able to do this manually also using the instructions linked to some posts later:
in Windows 7, this works for sure, just did it:
go to HKEY_CLASSES_ROOT\SystemFileAssociations\image\shell\edit\command in registry editor
paste your programme path in Default key, make sure you paste it correctly:
“your programme here” “%1”
mine was:
“C:\Program Files\Adobe\Adobe Photoshop CC 2018\Photoshop.exe” “%1”
keep the " " where they appear.
